It can be as hot or mild as you want and can be served with a side of salad or some garlic bread. It’s a dish that the whole family can enjoy and serves four people.
How to Make It
Ingredients:
- A drizzle of olive oil
- 1 finely diced, large red onion
- 1lb minced/ground beef
- 1oz packet of taco seasoning
- 2 tbsp tomato puree
- 14oz can of chopped tomatoes
- 3 cups beef stock
- 10.5oz uncooked spaghetti
- 5.3oz pot of room-temperature, full-fat sour cream
- 1 cup freshly grated Cheddar
- 2 fresh tomatoes
- 1-2 tbsp finely diced fresh coriander or parsley
- salt & black pepper
Instructions:
1. Add some oil to a large pot and place it over medium heat. Add the onion and fry it until it starts to soften and change color.
2. Then, add the beef. Break this up and cook until it is brown, and then add the seasoning. Stir in the tomato puree and fry.
3. Pour the stock and chopped tomatoes in and add the spaghetti. When the pasta starts softening, press it very gently to submerge it in the liquid. Simmer it at a steady temperature. When the pasta starts to soften up, use some tongs and gently toss it now and then to stop it from sticking to the pan. Make sure to keep it submerged.
4. When the sauce has been reduced and the spaghetti is cooked al dente, turn down the heat and add the sour cream. Cook this for a few minutes until the pasta is cooked and the sauce has begun to thicken.
5. Turn off the heat and stir in the cheese until it has all melted.
6. Do a taste test for seasoning and adjust where needed. Then, serve in individual portions with some diced tomatoes, parsley, or coriander.
